You Shouldn't Drink on an Empty Stomach

Since we are not all about liquid refreshments here at Smartini, we have a new addition to the menu: Texas Caviar. It's basically vegetables and Italian dressing... who can argue with that? AND, as long as you can open a few cans and wield a knife for just a brief moment, you can whip this up in a flash.

Texas Caviar

2 tomatoes, chopped
1 avocado, chopped
cilantro to taste
1 can chopped olives
1 can black eyed peas, rinsed
1 can black beans, rinsed
1 can white sweet corn, drained
juice of one lemon (or 1/3 c. lemon juice)

Mix and drizzle with Italian dressing, approx. 1/4 to 1/2 bottle. Best if marinated overnight. Serve with tortilla chips.

(Since we are mostly about liquid refreshments, I will add that this goes very well with my favorite adult beverage, beer!)
